How to Select a Good Young Jelly Coconut

Selecting a good coconut is equally as important as knowing what’s wrong with one.
- Whiter the color the better, more likely to be fresh and tasty. - Ultra bright in color with no to little dullness or signs of discoloration. - Top of the coconut (pointy end) will usually be the first ones to turn brownish as they age. - No signs of mold but unfortunately many store bought coconuts will have signs of mold on them usually on the underside which and is a fair indication that all is not well on the inside if the outside is suffering... Discard these ones . - No obvious holes, splits, or cracks or if the outer casing has been compromised there’s a good chance that the inside will have become damaged as well...Discard these ones. - Lightly press the bottom of the coconut with your thumb, there will usually be a little give in the underside of a young coconut - It should not feel overly soft.
- Green coconut color is generally okay, pink generally isn’t. - Green is usually remnants of the husk, whereas a pinkish hue is a surefire sign that the coconut isn’t in good shape.
- Coconuts are generally imported from miles away and it is not always possible to find the perfect coconut, you may have to accept a little yellowing even though this is not ideal you do the best you can.
